Ingredients

  • Pizza dough - 200 grams
  • Tom Yum paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Bell pepper (red) - 1/2, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Red onion - 1/2, thinly sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh cilantro - a handful, chopped
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a small bowl, mix the Tom Yum paste with the coconut milk until well combined to create the sauce.
  3. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  4. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  5. Spread the Tom Yum coconut sauce evenly over the pizza dough, leaving a small border for the crust.
  6. Layer the sliced bell pepper, mushrooms, red onion, and cherry tomatoes on top of the sauce.
  7. Drizzle olive oil over the vegetables and season with salt and pepper to taste.
  8. Bake the pizza in the preheated oven for about 15-20 minutes, or until the crust is golden and crispy.
