Ingredients

  • Thai bird's eye chili - 1, sliced
  • Mushrooms (shiitake or oyster) - 100 grams, sliced
  • Broccoli - 100 grams, cut into florets
  • Zucchini - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Cilantro - 10 grams, chopped
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Coconut oil - 1 tablespoon

Steps

  1. In a medium pot, heat the coconut oil over medium heat.
  2. Add the minced lemongrass, sliced galangal, torn kaffir lime leaves, and sliced chili. Sauté for about 2-3 minutes until fragrant.
  3. Pour in the vegetable broth and bring to a gentle simmer.
  4. Add the sliced mushrooms, broccoli florets, zucchini, and cherry tomatoes to the pot. Cook for about 10 minutes or until the vegetables are tender but still vibrant.
  5. Stir in the fish sauce and lime juice, adjusting to taste.
  6. Remove from heat, garnish with chopped cilantro, and serve hot.
