- Broccoli - 100 grams, cut into florets
- Zucchini - 100 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Cilantro - 10 grams, chopped
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Coconut oil - 1 tablespoon
Steps
- In a medium pot, heat the coconut oil over medium heat.
- Add the minced lemongrass, sliced galangal, torn kaffir lime leaves, and sliced chili. Sauté for about 2-3 minutes until fragrant.
- Pour in the vegetable broth and bring to a gentle simmer.
- Add the sliced mushrooms, broccoli florets, zucchini, and cherry tomatoes to the pot. Cook for about 10 minutes or until the vegetables are tender but still vibrant.
