Ingredients
- Rice noodles - 150 grams
- Chicken breast, sliced - 200 grams
- Coconut milk - 200 ml
- Lemongrass, minced - 1 stalk
- Galangal, sliced - 1 inch
- Kaffir lime leaves - 3 leaves
- Thai bird's eye chili, chopped - 1
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Fresh cilantro, chopped - 2 tablespoons
- Mushrooms, sliced - 100 grams
- Green onions, chopped - 2
- Vegetable oil - 1 tablespoon
- Salt - to taste
Steps
- Soak the rice noodles in warm water for about 15 minutes until they soften. Drain and set aside.
- In a pot, heat the vegetable oil over medium heat and add the minced lemongrass, sliced galangal, and chopped chili. Sauté for 2-3 minutes until fragrant.
- Add the sliced chicken breast to the pot and cook for 5-6 minutes until the chicken is cooked through.
- Pour in the coconut milk and bring to a gentle simmer. Add the kaffir lime leaves, fish sauce, and lime juice. Stir well.
- Add the sliced mushrooms and softened rice noodles to the pot. Cook for another 5 minutes, stirring occasionally, until everything is heated through.
- Taste and adjust seasoning with salt if needed. Remove from heat.
- Serve hot, garnished with fresh cilantro and chopped green onions.
