Ingredients

  • Rice noodles - 150 grams
  • Chicken breast, sliced - 200 grams
  • Coconut milk - 200 ml
  • Lemongrass, minced - 1 stalk
  • Galangal, sliced - 1 inch
  • Kaffir lime leaves - 3 leaves
  • Thai bird's eye chili, chopped - 1
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh cilantro, chopped - 2 tablespoons
  • Mushrooms, sliced - 100 grams
  • Green onions, chopped - 2
  • Vegetable oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Soak the rice noodles in warm water for about 15 minutes until they soften. Drain and set aside.
  2. In a pot, heat the vegetable oil over medium heat and add the minced lemongrass, sliced galangal, and chopped chili. Sauté for 2-3 minutes until fragrant.
  3. Add the sliced chicken breast to the pot and cook for 5-6 minutes until the chicken is cooked through.
  4. Pour in the coconut milk and bring to a gentle simmer. Add the kaffir lime leaves, fish sauce, and lime juice. Stir well.
  5. Add the sliced mushrooms and softened rice noodles to the pot. Cook for another 5 minutes, stirring occasionally, until everything is heated through.
  6. Taste and adjust seasoning with salt if needed. Remove from heat.
  7. Serve hot, garnished with fresh cilantro and chopped green onions.
