  • Kaffir lime leaves - 4 leaves, torn
  • Thai red chili - 2, smashed (adjust for spice preference)
  • Mushrooms (shiitake or any variety) - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Tofu - 200 grams, cubed
  • Cilantro - 20 grams, chopped
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Sugar - 1 teaspoon
  • Salt - to taste
  • Fresh chili slices (optional) - for garnish

Steps

  1. Bring the vegetable broth to a boil in a pot over medium heat.
  2. Add the chopped lemongrass, sliced galangal, torn kaffir lime leaves, and smashed Thai red chili to the boiling broth. Let it simmer for about 10 minutes to infuse the flavors.
  3. Add the sliced mushrooms and let them cook for an additional 5 minutes.
  4. Stir in the cubed tofu and halved cherry tomatoes, and let them heat through for about 3-4 minutes.
  5. Meanwhile, cook the rice noodles according to package instructions, then drain and set aside.
  6. Add lime juice, soy sauce, sugar, and salt to the broth, adjusting seasoning to taste.
  7. In serving bowls, place the cooked noodles and ladle the hot broth with vegetables and tofu over them.
