  • Kaffir lime leaves - 4 leaves, torn
  • Thai bird's eye chilies - 2, smashed
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 10 grams, chopped
  • Mushrooms, sliced - 100 grams (e.g., shiitake or oyster)
  • Salt - to taste

Steps

  1. In a pot, bring the chicken broth to a boil and add the chopped lemongrass, galangal, kaffir lime leaves, and smashed chilies. Let it simmer for 10 minutes to infuse the flavors.
  2. Add the sliced chicken breast and mushrooms to the pot, cooking for an additional 5-7 minutes until the chicken is cooked through.
