Ingredients

  • Portobello mushrooms - 200 grams
  • Shiitake mushrooms - 100 grams
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 tablespoon, grated
  • Lemongrass - 1 stalk, finely chopped
  • Kaffir lime leaves - 2, finely chopped
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili paste - 1 teaspoon
  • Breadcrumbs - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for cooking)
  • Burger buns - 2
  • Fresh cilantro - a handful, for garnish
  • Lettuce leaves - 2

Steps

  1. Preheat a skillet over medium heat with 1 tablespoon of olive oil.
  2. Finely chop the portobello and shiitake mushrooms, then add to the skillet along with minced garlic, grated ginger, chopped lemongrass, and kaffir lime leaves. Sauté for about 5-7 minutes until the mushrooms are cooked and moisture is evaporated.
  3. In a mixing bowl, combine the sautéed mushroom mixture with soy sauce, lime juice, chili paste, breadcrumbs, salt, and black pepper. Mix until well combined.
  4. Form the mixture into two patties and place them in the fridge for 10 minutes to firm up.
  5. Heat the remaining tablespoon of olive oil in the skillet over medium heat, then cook the patties for about 4-5 minutes on each side until golden brown.
  6. While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
  7. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the mushroom patty, and garnish with fresh cilantro. Top with the other half of the bun.
