- Portobello mushrooms - 200 grams
- Shiitake mushrooms - 100 grams
- Garlic - 2 cloves, minced
- Fresh ginger - 1 tablespoon, grated
- Lemongrass - 1 stalk, finely chopped
- Kaffir lime leaves - 2, finely chopped
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Chili paste - 1 teaspoon
- Breadcrumbs - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Burger buns - 2
- Fresh cilantro - a handful, for garnish
- Lettuce leaves - 2
Steps
- Preheat a skillet over medium heat with 1 tablespoon of olive oil.
- Finely chop the portobello and shiitake mushrooms, then add to the skillet along with minced garlic, grated ginger, chopped lemongrass, and kaffir lime leaves. Sauté for about 5-7 minutes until the mushrooms are cooked and moisture is evaporated.
- In a mixing bowl, combine the sautéed mushroom mixture with soy sauce, lime juice, chili paste, breadcrumbs, salt, and black pepper. Mix until well combined.
- Form the mixture into two patties and place them in the fridge for 10 minutes to firm up.
- Heat the remaining tablespoon of olive oil in the skillet over medium heat, then cook the patties for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, prepare the burger buns by toasting them lightly if desired.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the mushroom patty, and garnish with fresh cilantro. Top with the other half of the bun.
