- Lemongrass - 1 stalk, chopped
- Kaffir lime leaves - 4 leaves, torn
- Galangal - 5 grams, sliced
- Thai bird's eye chilies - 2, smashed
- Mushrooms (shiitake or oyster) - 100 grams, sliced
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Cilantro - 10 grams, chopped, for garnish
- Thai chili paste (Nam Prik Pao) - 1 tablespoon
- Salt - to taste
Steps
- In a pot, bring the chicken broth to a simmer over medium heat.
- Add the chopped lemongrass, torn kaffir lime leaves, sliced galangal, and smashed bird's eye chilies to the broth. Let it simmer for 5 minutes to infuse the flavors.
- Stir in the sliced pork belly and cook for about 10 minutes, or until the pork is tender.
- Add the sliced mushrooms and continue to simmer for another 5 minutes.
- Stir in the fish sauce and Thai chili paste, adjusting the seasoning to taste.
