Ingredients

  • Pork belly - 250 grams, thinly sliced
  • Chicken broth - 500 ml
  • Lemongrass - 1 stalk, chopped
  • Kaffir lime leaves - 4 leaves, torn
  • Galangal - 5 grams, sliced
  • Thai bird's eye chilies - 2, smashed
  • Mushrooms (shiitake or oyster) - 100 grams, sliced
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 10 grams, chopped, for garnish
  • Thai chili paste (Nam Prik Pao) - 1 tablespoon
  • Salt - to taste

Steps

  1. In a pot, bring the chicken broth to a simmer over medium heat.
  2. Add the chopped lemongrass, torn kaffir lime leaves, sliced galangal, and smashed bird's eye chilies to the broth. Let it simmer for 5 minutes to infuse the flavors.
  3. Stir in the sliced pork belly and cook for about 10 minutes, or until the pork is tender.
  4. Add the sliced mushrooms and continue to simmer for another 5 minutes.
  5. Stir in the fish sauce and Thai chili paste, adjusting the seasoning to taste.
  6. Remove from heat and add lime juice. Stir well.
