Ingredients

  • Coconut milk - 400 ml
  • Chicken breast - 200 g, sliced
  • Chicken broth - 500 ml
  • Lemongrass - 2 stalks, chopped
  • Galangal - 20 g, sliced
  • Kaffir lime leaves - 4 leaves, torn
  • Mushrooms (shiitake or oyster) - 100 g, sliced
  • Fish sauce - 2 tbsp
  • Lime juice - 2 tbsp
  • Thai red chili - 2, sliced (adjust to taste)
  • Cilantro - 1/4 cup, chopped (for garnish)
  • Salt - to taste

Steps

  1. In a pot, combine the chicken broth, lemongrass, galangal, and kaffir lime leaves. Bring to a boil over medium heat.
  2. Add the sliced chicken breast to the pot and simmer for about 10 minutes until the chicken is cooked through.
  3. Stir in the coconut milk, sliced mushrooms, fish sauce, and Thai red chili. Continue to simmer for another 5 minutes.
  4. Remove the soup from heat and stir in the lime juice. Adjust seasoning with salt to taste.
  5. Serve hot, garnished with chopped cilantro.
