Ingredients
- Coconut milk - 400 ml
- Chicken breast - 200 g, sliced
- Chicken broth - 500 ml
- Lemongrass - 2 stalks, chopped
- Galangal - 20 g, sliced
- Kaffir lime leaves - 4 leaves, torn
- Mushrooms (shiitake or oyster) - 100 g, sliced
- Fish sauce - 2 tbsp
- Lime juice - 2 tbsp
- Thai red chili - 2, sliced (adjust to taste)
- Cilantro - 1/4 cup, chopped (for garnish)
- Salt - to taste
Steps
- In a pot, combine the chicken broth, lemongrass, galangal, and kaffir lime leaves. Bring to a boil over medium heat.
- Add the sliced chicken breast to the pot and simmer for about 10 minutes until the chicken is cooked through.
- Stir in the coconut milk, sliced mushrooms, fish sauce, and Thai red chili. Continue to simmer for another 5 minutes.
- Remove the soup from heat and stir in the lime juice. Adjust seasoning with salt to taste.
- Serve hot, garnished with chopped cilantro.
