Ingredients

  • Oyster mushrooms - 150 grams
  • Shiitake mushrooms - 100 grams
  • Lemongrass - 1 stalk, finely chopped
  • Kaffir lime leaves - 3 leaves, torn
  • Galangal - 1 inch, sliced
  • Thai bird's eye chilies - 2, chopped
  • Vegetable broth - 500 ml
  • Soy sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Spring onions - 2, chopped
  • Tofu, firm - 100 grams, cubed
  • Cherry tomatoes - 100 grams, halved
  • Mushroom seasoning - 1 teaspoon
  • Salt - to taste

Steps

  1. Heat a pot over medium heat and add the chopped lemongrass, galangal, and bird's eye chilies. Sauté for 2-3 minutes until fragrant.
  2. Pour in the vegetable broth and bring to a simmer. Add the torn kaffir lime leaves and let it simmer for 5 minutes.
  3. Add the oyster and shiitake mushrooms, and cook for another 5 minutes until the mushrooms are tender.
  4. Stir in the cubed tofu and halved cherry tomatoes, cooking for an additional 3-4 minutes.
  5. Season the broth with soy sauce, lime juice, and mushroom seasoning. Adjust salt to taste.
  6. Remove from heat and stir in chopped cilantro and spring onions just before serving.
  7. Ladle the soup into bowls and garnish with additional cilantro and lime wedges if desired.
