  • Lemongrass (smashed) - 1 stalk
  • Galangal (sliced) - 1 piece (about 2 cm)
  • Kaffir lime leaves - 3 leaves
  • Mushrooms (sliced) - 100 grams
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Chili paste (Nam Prik Pao) - 1 tablespoon
  • Cilantro (chopped) - 2 tablespoons
  • Thai bird's eye chili (sliced) - 1-2 pieces (optional)
  • Salt - to taste

Steps

  1. In a pot, combine the chicken or vegetable broth, lemongrass, galangal, and kaffir lime leaves. Bring to a boil over medium heat.
  2. Once boiling, reduce the heat to a simmer and let it cook for 10 minutes to infuse the flavors.
  3. Strain the broth to remove the herbs and return the clear broth to the pot.
  4. Add the coconut milk and bring the mixture back to a gentle simmer.
  5. Stir in the fish sauce, lime juice, and chili paste. Adjust seasoning with salt if necessary.
  6. Add the shrimp and mushrooms to the pot and cook for about 5-7 minutes, or until the shrimp turn pink and are cooked through.
  7. Remove from heat and stir in the chopped cilantro and sliced bird's eye chili if using.
  8. Serve hot, garnished with additional cilantro and lime wedges on the side.
