- Lemongrass (smashed) - 1 stalk
- Galangal (sliced) - 1 piece (about 2 cm)
- Kaffir lime leaves - 3 leaves
- Mushrooms (sliced) - 100 grams
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Chili paste (Nam Prik Pao) - 1 tablespoon
- Cilantro (chopped) - 2 tablespoons
- Thai bird's eye chili (sliced) - 1-2 pieces (optional)
- Salt - to taste
Steps
- In a pot, combine the chicken or vegetable broth, lemongrass, galangal, and kaffir lime leaves. Bring to a boil over medium heat.
- Once boiling, reduce the heat to a simmer and let it cook for 10 minutes to infuse the flavors.
- Strain the broth to remove the herbs and return the clear broth to the pot.
- Add the coconut milk and bring the mixture back to a gentle simmer.
- Stir in the fish sauce, lime juice, and chili paste. Adjust seasoning with salt if necessary.
- Add the shrimp and mushrooms to the pot and cook for about 5-7 minutes, or until the shrimp turn pink and are cooked through.
- Remove from heat and stir in the chopped cilantro and sliced bird's eye chili if using.
- Serve hot, garnished with additional cilantro and lime wedges on the side.
