Ingredients
- Vegetable broth - 500 ml
- Lemongrass - 2 stalks, chopped
- Kaffir lime leaves - 4 leaves, torn
- Galangal - 2 cm, sliced
- Thai bird's eye chili - 2, smashed
- Mushrooms (shiitake or oyster) - 150 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Tofu (firm) - 150 grams, cubed
- Spinach - 100 grams, fresh
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Coriander leaves - a handful, chopped
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, bring the vegetable broth to a simmer over medium heat.
- Add the chopped lemongrass, torn kaffir lime leaves, sliced galangal, and smashed bird's eye chili to the pot. Let it simmer for about 10 minutes to infuse the flavors.
- Add the sliced mushrooms and cherry tomatoes to the pot. Cook for an additional 5 minutes until the mushrooms are tender.
- Stir in the cubed tofu and let it heat through for 2-3 minutes.
- Add the fresh spinach and cook until wilted, about 1-2 minutes.
- Remove the pot from heat and stir in the lime juice and soy sauce. Season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with chopped coriander leaves before serving.
