Ingredients

  • Vegetable broth - 500 ml
  • Lemongrass - 2 stalks, chopped
  • Kaffir lime leaves - 4 leaves, torn
  • Galangal - 2 cm, sliced
  • Thai bird's eye chili - 2, smashed
  • Mushrooms (shiitake or oyster) - 150 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Tofu (firm) - 150 grams, cubed
  • Spinach - 100 grams, fresh
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Coriander leaves - a handful, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a pot, bring the vegetable broth to a simmer over medium heat.
  2. Add the chopped lemongrass, torn kaffir lime leaves, sliced galangal, and smashed bird's eye chili to the pot. Let it simmer for about 10 minutes to infuse the flavors.
  3. Add the sliced mushrooms and cherry tomatoes to the pot. Cook for an additional 5 minutes until the mushrooms are tender.
  4. Stir in the cubed tofu and let it heat through for 2-3 minutes.
  5. Add the fresh spinach and cook until wilted, about 1-2 minutes.
  6. Remove the pot from heat and stir in the lime juice and soy sauce. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and garnish with chopped coriander leaves before serving.
