- Lime juice - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Green onions - 2, sliced
- Zucchini - 1 medium, spiralized or julienned
Steps
- In a medium saucepan, bring the chicken broth to a simmer over medium heat.
- Add the chopped lemongrass, torn kaffir lime leaves, sliced galangal, and smashed bird's eye chili to the saucepan.
- Simmer for about 5 minutes to infuse the broth with the flavors of the herbs.
- Add the sliced mushrooms and zucchini to the broth, cooking for an additional 3-4 minutes until the mushrooms are tender.
- Stir in the shrimp and cook for another 3-5 minutes until the shrimp turn pink and are cooked through.
