Ingredients

  • White fish fillets (cod or tilapia) - 200 grams
  • Panko breadcrumbs - 50 grams
  • Tom Yum paste - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onion - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Egg - 1, large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Mayonnaise - 2 tablespoons
  • Chili sauce - 1 tablespoon

Steps

  1. In a food processor, combine the white fish fillets, Tom Yum paste, cilantro, green onion, lime juice, egg, salt, and black pepper. Blend until the mixture is smooth.
  2. Transfer the fish mixture to a bowl and fold in the panko breadcrumbs until well combined. Form the mixture into two equal-sized patties.
  3. Heat a non-stick skillet over medium heat and add a little oil. Cook the fish patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  4. Meanwhile, prepare the zesty mayo by mixing the mayonnaise with the chili sauce in a small bowl.
  5. To assemble the burgers, spread the zesty mayo on the bottom half of each burger bun, add a lettuce leaf, place the cooked fish patty on top, and finish with a slice of tomato and the top half of the bun.
  6. Serve immediately with your choice of side.
