Ingredients
- White fish fillets (cod or tilapia) - 200 grams
- Panko breadcrumbs - 50 grams
- Tom Yum paste - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Green onion - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Egg - 1, large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Mayonnaise - 2 tablespoons
- Chili sauce - 1 tablespoon
Steps
- In a food processor, combine the white fish fillets, Tom Yum paste, cilantro, green onion, lime juice, egg, salt, and black pepper. Blend until the mixture is smooth.
- Transfer the fish mixture to a bowl and fold in the panko breadcrumbs until well combined. Form the mixture into two equal-sized patties.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the fish patties for about 4-5 minutes on each side, or until golden brown and cooked through.
- Meanwhile, prepare the zesty mayo by mixing the mayonnaise with the chili sauce in a small bowl.
- To assemble the burgers, spread the zesty mayo on the bottom half of each burger bun, add a lettuce leaf, place the cooked fish patty on top, and finish with a slice of tomato and the top half of the bun.
- Serve immediately with your choice of side.
