- Shiitake mushrooms - 150 grams, finely chopped
- Chickpeas - 1 cup, cooked and mashed
- Thai red curry paste - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Breadcrumbs - 1/2 cup
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Whole grain burger buns - 2
- Cucumber - 1/2, thinly sliced
- Carrots - 1/2, grated
- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
Steps
- In a large bowl, combine the finely chopped shiitake mushrooms, mashed chickpeas, Thai red curry paste, chopped cilantro, lime juice, minced garlic, grated ginger, breadcrumbs, salt, and black pepper. Mix until well combined.
- Form the mixture into two equal-sized patties and place them on a plate. Refrigerate for about 15 minutes to firm up.
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side, or until golden brown and cooked through.
- While the patties are cooking, prepare the cucumber salad by combining the sliced cucumber, grated carrots, soy sauce, and rice vinegar in a small bowl. Toss to coat and set aside.
