  • Mushrooms - 100 grams, sliced (shiitake or button)
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 50 grams, fresh
  • Fish sauce - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Spring onions - 2, chopped
  • Salt - to taste

Steps

  1. In a pot, bring the chicken broth to a gentle simmer over medium heat.
  2. Add the sliced galangal, crushed lemongrass, and torn kaffir lime leaves to the pot and simmer for 5 minutes to infuse the flavors.
  3. Add the sliced chicken breast to the pot and cook for about 5-7 minutes, or until the chicken is fully cooked.
  4. Stir in the coconut milk, lime juice, fish sauce, and bird's eye chili, and simmer for an additional 3-4 minutes.
  5. Add the sliced mushrooms and cherry tomatoes, cooking for another 2-3 minutes until the mushrooms are tender.
  6. Finally, stir in the fresh spinach and cook for 1 minute until wilted.
  7. Remove from heat and garnish with fresh cilantro and chopped spring onions before serving.
