- Cherry tomatoes - 100 grams, halved
- Spinach - 50 grams, fresh
- Fish sauce - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Spring onions - 2, chopped
- Salt - to taste
Steps
- In a pot, bring the chicken broth to a gentle simmer over medium heat.
- Add the sliced galangal, crushed lemongrass, and torn kaffir lime leaves to the pot and simmer for 5 minutes to infuse the flavors.
- Add the sliced chicken breast to the pot and cook for about 5-7 minutes, or until the chicken is fully cooked.
- Stir in the coconut milk, lime juice, fish sauce, and bird's eye chili, and simmer for an additional 3-4 minutes.
