Ingredients

  • Pork shoulder (thinly sliced) - 200 grams
  • Chicken stock - 500 ml
  • Lemongrass (bruised) - 1 stalk
  • Kaffir lime leaves - 4 leaves
  • Galangal (sliced) - 1 inch piece
  • Thai bird's eye chilies (sliced) - 2-3 chilies
  • Mushrooms (sliced) - 100 grams
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh coriander leaves - for garnish
  • Spring onions (chopped) - 2 stalks

Steps

  1. In a pot, bring the chicken stock to a boil.
  2. Add the bruised lemongrass, sliced galangal, and kaffir lime leaves to the boiling stock.
  3. Reduce heat and let it simmer for 10 minutes to infuse the flavors.
  4. Add the sliced pork shoulder to the pot and cook for 5-7 minutes until the meat is tender.
  5. Stir in the sliced mushrooms and bird's eye chilies, and let them cook for an additional 3-5 minutes.
  6. Season the soup with fish sauce and lime juice, adjusting to taste.
  7. Remove from heat and serve hot, garnished with fresh coriander and chopped spring onions.
