Ingredients

  • Coconut milk - 400 ml
  • Fish fillets (white fish like tilapia or cod) - 200 g
  • Lemongrass - 2 stalks, bruised
  • Galangal (or ginger) - 5 slices
  • Kaffir lime leaves - 4 leaves, torn
  • Fish sauce - 2 tbsp
  • Lime juice - 2 tbsp
  • Mushrooms (sliced) - 100 g
  • Thai bird's eye chili - 1, sliced (adjust for spice preference)
  • Fresh cilantro - 2 tbsp, chopped
  • Shallots - 2, sliced
  • Water - 200 ml

Steps

  1. In a pot, combine the coconut milk and water, and bring to a gentle simmer over medium heat.
  2. Add the bruised lemongrass, galangal slices, and torn kaffir lime leaves to the pot.
  3. Once the mixture is simmering, add the sliced shallots and mushrooms. Cook for about 5 minutes until the mushrooms soften.
  4. Add the fish fillets and cook for another 5-7 minutes, or until the fish is cooked through and flakes easily.
  5. Stir in the fish sauce, lime juice, and sliced chili. Adjust seasoning to taste.
  6. Remove from heat and garnish with chopped cilantro before serving.
