Steps
- Preheat the oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
- In a saucepan, combine coconut milk, minced lemongrass, sliced galangal, torn kaffir lime leaves, and bring to a simmer over low heat for 5 minutes to infuse flavors.
- Add sliced mushrooms and simmer for an additional 3-4 minutes until the mushrooms are tender.
- Stir in the fish sauce (or soy sauce), lime juice, and chili flakes, then remove from heat.
- Spread the coconut milk mixture evenly over the rolled-out pizza dough.
