  • Whole wheat pizza dough - 200 grams

  • Lemongrass - 1 stalk, minced
  • Galangal - 1 inch, thinly sliced
  • Kaffir lime leaves - 2 leaves, torn
  • Mushrooms - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 1, thinly sliced
  • Thai basil - 10 grams, chopped
  • Cilantro - 10 grams, chopped
  • Lime juice - 1 tablespoon
  • Fish sauce - 1 tablespoon (or soy sauce for vegetarian option)
  • Chili flakes - 1 teaspoon (optional)
  • Mozzarella cheese - 100 grams, shredded

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  3. In a saucepan, combine coconut milk, minced lemongrass, sliced galangal, torn kaffir lime leaves, and bring to a simmer over low heat for 5 minutes to infuse flavors.
  4. Add sliced mushrooms and simmer for an additional 3-4 minutes until the mushrooms are tender.
  5. Stir in the fish sauce (or soy sauce), lime juice, and chili flakes, then remove from heat.
  6. Spread the coconut milk mixture evenly over the rolled-out pizza dough.
  7. Top the pizza with halved cherry tomatoes, sliced red bell pepper, and shredded mozzarella cheese.
