- Kaffir lime leaves - 3 leaves, torn
- Mushrooms (shiitake or oyster) - 100 grams, sliced
- Fish sauce - 2 tablespoons
- Lime juice - 2 tablespoons
- Cilantro - a handful, chopped
- Chili (fresh or dried) - to taste
- Salt - to taste
Steps
- In a pot, combine coconut milk and broth, and bring to a gentle simmer over medium heat.
- Add the chopped lemongrass, sliced galangal, and torn kaffir lime leaves to the pot, and let it simmer for about 5 minutes to infuse the flavors.
- Add the sliced pork belly and mushrooms, cooking until the pork is tender, about 10 minutes.
- Stir in the fish sauce, lime juice, and adjust the seasoning with salt to taste.
