- Galangal - 20 grams, sliced (or ginger if unavailable)
- Lemongrass - 1 stalk, cut into 2-inch pieces and smashed
- Kaffir lime leaves - 3 leaves, torn
- Mushrooms - 100 grams, sliced
- Fish sauce - 2 tablespoons
- Fresh lime juice - 2 tablespoons
- Thai bird's eye chili - 1, smashed (adjust to taste)
- Cilantro - a handful, chopped (for garnish)
- Green onions - 2 stalks, sliced (for garnish)
Steps
- In a pot, combine chicken broth, coconut milk, galangal, lemongrass, and kaffir lime leaves. Bring to a gentle simmer over medium heat.
- Add the sliced chicken breast and mushrooms to the pot. Cook for about 10 minutes or until the chicken is cooked through.
- Stir in the fish sauce, lime juice, and smashed chili. Adjust seasoning to taste.
- Remove from heat and discard the lemongrass and galangal slices.
- Serve hot, garnished with chopped cilantro and sliced green onions.
