Ingredients

  • Coconut milk - 400 ml
  • Chicken broth - 200 ml
  • Galangal - 20 grams, sliced (or ginger if unavailable)
  • Lemongrass - 1 stalk, cut into 2-inch pieces and smashed
  • Kaffir lime leaves - 3 leaves, torn
  • Mushrooms - 100 grams, sliced
  • Fish sauce - 2 tablespoons
  • Fresh lime juice - 2 tablespoons
  • Thai bird's eye chili - 1, smashed (adjust to taste)
  • Cilantro - a handful, chopped (for garnish)
  • Green onions - 2 stalks, sliced (for garnish)

Steps

  1. In a pot, combine chicken broth, coconut milk, galangal, lemongrass, and kaffir lime leaves. Bring to a gentle simmer over medium heat.
  2. Add the sliced chicken breast and mushrooms to the pot. Cook for about 10 minutes or until the chicken is cooked through.
  3. Stir in the fish sauce, lime juice, and smashed chili. Adjust seasoning to taste.
  4. Remove from heat and discard the lemongrass and galangal slices.
  5. Serve hot, garnished with chopped cilantro and sliced green onions.
