Ingredients

  • Chicken breast - 200 grams, thinly sliced
  • Glass noodles (Shirataki) - 100 grams, rinsed and drained
  • Broccoli florets - 100 grams
  • Mushrooms (shiitake or button) - 50 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Vegetable broth (low sodium) - 500 ml
  • Fish sauce - 2 tablespoons
  • Coconut milk - 100 ml
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red chili flakes - optional, to taste

Steps

  1. In a pot, heat a small amount of oil over medium heat and sauté the minced garlic and ginger until fragrant, about 1 minute.
  2. Add the sliced chicken breast to the pot and cook until no longer pink, about 5-7 minutes.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the broccoli florets and sliced mushrooms to the pot. Cook for an additional 5 minutes until the vegetables are tender.
  5. Stir in the rinsed glass noodles and cook for another 2 minutes.
  6. Add the fish sauce, coconut milk, lime juice, salt, and pepper to taste. Mix well and let it heat through for another minute.
  7. Remove from heat and garnish with chopped cilantro and red chili flakes if desired. Serve hot.
