Ingredients
- Chicken breast - 200 grams, thinly sliced
- Glass noodles (Shirataki) - 100 grams, rinsed and drained
- Broccoli florets - 100 grams
- Mushrooms (shiitake or button) - 50 grams, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Vegetable broth (low sodium) - 500 ml
- Fish sauce - 2 tablespoons
- Coconut milk - 100 ml
- Fresh cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Red chili flakes - optional, to taste
Steps
- In a pot, heat a small amount of oil over medium heat and sauté the minced garlic and ginger until fragrant, about 1 minute.
- Add the sliced chicken breast to the pot and cook until no longer pink, about 5-7 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Add the broccoli florets and sliced mushrooms to the pot. Cook for an additional 5 minutes until the vegetables are tender.
- Stir in the rinsed glass noodles and cook for another 2 minutes.
- Add the fish sauce, coconut milk, lime juice, salt, and pepper to taste. Mix well and let it heat through for another minute.
- Remove from heat and garnish with chopped cilantro and red chili flakes if desired. Serve hot.
