- Vegetable broth - 500 ml
- Carrot - 1 medium, sliced
- Mushrooms - 100 g, sliced
- Broccoli - 100 g, cut into florets
- Snow peas - 100 g, trimmed
- Tofu - 150 g, cubed
- Garlic - 2 cloves, minced
- Ginger - 1 tsp, grated
- Shallot - 1 medium, sliced
- Soy sauce - 2 tbsp
- Lime juice - 1 tbsp
- Cilantro - 2 tbsp, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, heat a splash of vegetable broth over medium heat and sauté the minced garlic, grated ginger, and sliced shallot until fragrant, about 2-3 minutes.
- Add the remaining vegetable broth to the pot and bring to a gentle simmer.
- Stir in the sliced carrots and cook for about 5 minutes until they start to soften.
- Add the sliced mushrooms, broccoli florets, and snow peas to the pot, cooking for another 5-7 minutes until the vegetables are tender but still crisp.
- Gently add the cubed tofu to the soup and let it warm through, about 2-3 minutes.
- Season the soup with soy sauce, lime juice, salt, and black pepper to taste.
- Once seasoned, remove from heat and stir in the chopped cilantro just before serving.
