Ingredients

  • Vegetable broth - 500 ml
  • Mushrooms (shiitake or cremini) - 100 g, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Baby corn - 100 g, chopped
  • Tofu (firm) - 150 g, cubed
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 tsp, grated
  • Lime leaves - 3 leaves, torn
  • Thai basil - 10 g, chopped
  • Cilantro - 10 g, chopped
  • Soy sauce - 2 tbsp
  • Lime juice - 1 tbsp
  • Chili flakes - 1/2 tsp (optional)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, heat the vegetable broth over medium heat until it simmers.
  2. Add the minced garlic and grated ginger to the pot, stirring for about 1 minute until fragrant.
  3. Add the sliced mushrooms, julienned carrot, zucchini, and chopped baby corn to the broth. Cook for 5-7 minutes until the vegetables are slightly tender.
  4. Stir in the cubed tofu and torn lime leaves, and let it simmer for another 5 minutes.
  5. Add the soy sauce, lime juice, and chili flakes (if using). Season with salt and black pepper to taste.
  6. Remove from heat and stir in the chopped Thai basil and cilantro just before serving.
  7. Ladle the soup into bowls and garnish with additional herbs if desired.
