Ingredients
- Vegetable broth - 500 ml
- Mushrooms (shiitake or cremini) - 100 g, sliced
- Carrot - 1 medium, julienned
- Zucchini - 1 small, julienned
- Baby corn - 100 g, chopped
- Tofu (firm) - 150 g, cubed
- Garlic - 2 cloves, minced
- Fresh ginger - 1 tsp, grated
- Lime leaves - 3 leaves, torn
- Thai basil - 10 g, chopped
- Cilantro - 10 g, chopped
- Soy sauce - 2 tbsp
- Lime juice - 1 tbsp
- Chili flakes - 1/2 tsp (optional)
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, heat the vegetable broth over medium heat until it simmers.
- Add the minced garlic and grated ginger to the pot, stirring for about 1 minute until fragrant.
- Add the sliced mushrooms, julienned carrot, zucchini, and chopped baby corn to the broth. Cook for 5-7 minutes until the vegetables are slightly tender.
- Stir in the cubed tofu and torn lime leaves, and let it simmer for another 5 minutes.
- Add the soy sauce, lime juice, and chili flakes (if using). Season with salt and black pepper to taste.
- Remove from heat and stir in the chopped Thai basil and cilantro just before serving.
- Ladle the soup into bowls and garnish with additional herbs if desired.
