Ingredients
- Firm tofu - 300 grams
- Green beans - 50 grams, finely chopped
- Red curry paste - 2 tablespoons
- Lemongrass - 1 stalk, finely minced
- Kaffir lime leaves - 2 leaves, finely chopped
- Fresh cilantro - 2 tablespoons, chopped
- Cornstarch - 2 tablespoons
- Rice flour - 3 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - for frying
- Cucumber - 1/2, sliced (for serving)
- Sweet chili sauce - for dipping
Steps
- Press the firm tofu to remove excess water for about 15 minutes, then crumble it into a large mixing bowl.
- Add the finely chopped green beans, red curry paste, minced lemongrass, chopped kaffir lime leaves, and chopped cilantro to the crumbled tofu.
- Sprinkle in the cornstarch, rice flour, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
- Shape the mixture into small patties, about 5 cm in diameter and 1 cm thick.
- Heat vegetable oil in a frying pan over medium heat. Once hot, carefully place the patties in the pan, being sure not to overcrowd them.
- Fry the patties for 3-4 minutes on each side or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
- Serve warm with sliced cucumber and sweet chili sauce for dipping.
