  • Green beans - 50 grams, chopped
  • Red curry paste - 2 tablespoons
  • Fresh coriander - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Rice flour - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - for frying

Steps

  1. Drain the tofu and press it to remove excess moisture, then crumble it into a mixing bowl.
  2. Add the chopped green beans, red curry paste, fresh coriander, lime juice, rice flour, salt, and black pepper to the crumbled tofu.
  3. Mix the ingredients thoroughly until well combined, forming a sticky mixture.
  4. Heat vegetable oil in a frying pan over medium heat.
  5. Using your hands, form the tofu mixture into small patties, about 2.5 cm in diameter.
  6. Carefully place the patties into the hot oil, frying them in batches to avoid overcrowding.
  7. Fry each patty for about 3-4 minutes on each side, or until golden brown and crispy.
  8. Remove the patties and place them on paper towels to drain excess oil.
  9. Serve hot with a lime wedge and your choice of dipping sauce.
