- Thai eggplant - 100 grams, finely chopped
- Green beans - 50 grams, finely chopped
- Carrot - 50 grams, grated
- Shallots - 30 grams, finely chopped
- Garlic - 2 cloves, minced
- Fresh coriander - 2 tablespoons, chopped
- Thai red curry paste - 1 tablespoon
- Rice flour - 60 grams
- Cornstarch - 30 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 60 ml
- Vegetable oil - for frying
Steps
- In a large mixing bowl, combine the chopped Thai eggplant, green beans, grated carrot, finely chopped shallots, minced garlic, and chopped coriander.
- Add the Thai red curry paste, rice flour, cornstarch, salt, and black pepper to the bowl, then gradually mix in the water until a thick batter forms.
- Heat vegetable oil in a deep frying pan over medium heat. You need enough oil to submerge the fritters.
- Once the oil is hot, use a tablespoon to scoop the vegetable batter and gently drop it into the hot oil, frying in batches to avoid overcrowding.
- Fry each fritter for about 3-4 minutes on each side or until they turn golden brown and crispy.
- Remove the fritters from the oil and place them on paper towels to drain excess oil.
- Serve hot with sweet chili sauce for dipping.
