Ingredients

  • Thai eggplant - 100 grams, finely chopped
  • Green beans - 50 grams, finely chopped
  • Carrot - 50 grams, grated
  • Shallots - 30 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh coriander - 2 tablespoons, chopped
  • Thai red curry paste - 1 tablespoon
  • Rice flour - 60 grams
  • Cornstarch - 30 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 60 ml
  • Vegetable oil - for frying

Steps

  1. In a large mixing bowl, combine the chopped Thai eggplant, green beans, grated carrot, finely chopped shallots, minced garlic, and chopped coriander.
  2. Add the Thai red curry paste, rice flour, cornstarch, salt, and black pepper to the bowl, then gradually mix in the water until a thick batter forms.
  3. Heat vegetable oil in a deep frying pan over medium heat. You need enough oil to submerge the fritters.
  4. Once the oil is hot, use a tablespoon to scoop the vegetable batter and gently drop it into the hot oil, frying in batches to avoid overcrowding.
  5. Fry each fritter for about 3-4 minutes on each side or until they turn golden brown and crispy.
  6. Remove the fritters from the oil and place them on paper towels to drain excess oil.
  7. Serve hot with sweet chili sauce for dipping.
