Ingredients

  • Cauliflower - 300 grams, riced
  • Egg - 1 large
  • Mozzarella cheese - 100 grams, shredded
  • Thai red curry paste - 1 tablespoon
  • Coconut milk - 50 ml
  • Bell pepper - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Zucchini - 1 small, sliced
  • Carrot - 1 small, julienned
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Crushed peanuts - 2 tablespoons, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the riced cauliflower, egg, mozzarella cheese, salt, and pepper. Mix until well combined.
  3. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick.
  4. Bake the crust in the preheated oven for 20 minutes until golden and firm.
  5. While the crust is baking, prepare the sauce by mixing the Thai red curry paste and coconut milk in a small bowl until smooth.
  6. Once the crust is done, remove it from the oven and spread the Thai sauce evenly over the top.
  7. Arrange the sliced bell pepper, red onion, zucchini, and carrot on top of the sauce.
  8. Return the pizza to the oven and bake for an additional 10-15 minutes until the veggies are tender.
  9. Remove from the oven, drizzle with lime juice, and sprinkle with fresh cilantro and crushed peanuts.
  10. Slice and serve hot.
