Ingredients
- Cauliflower - 300 grams, riced
- Egg - 1 large
- Mozzarella cheese - 100 grams, shredded
- Thai red curry paste - 1 tablespoon
- Coconut milk - 50 ml
- Bell pepper - 1 medium, sliced
- Red onion - 1 small, thinly sliced
- Zucchini - 1 small, sliced
- Carrot - 1 small, julienned
- Fresh cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Crushed peanuts - 2 tablespoons, for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the riced cauliflower, egg, mozzarella cheese, salt, and pepper. Mix until well combined.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 20 minutes until golden and firm.
- While the crust is baking, prepare the sauce by mixing the Thai red curry paste and coconut milk in a small bowl until smooth.
- Once the crust is done, remove it from the oven and spread the Thai sauce evenly over the top.
- Arrange the sliced bell pepper, red onion, zucchini, and carrot on top of the sauce.
- Return the pizza to the oven and bake for an additional 10-15 minutes until the veggies are tender.
- Remove from the oven, drizzle with lime juice, and sprinkle with fresh cilantro and crushed peanuts.
- Slice and serve hot.
