- Spaghetti - 160 grams
- Red bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Zucchini - 1 medium, sliced
- Broccoli florets - 100 grams
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Peanut butter - 2 tablespoons
- Soy sauce - 2 tablespoons
- Lime juice - 1 tablespoon
- Sesame oil - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Crushed red pepper flakes - to taste
Steps
- Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add sesame oil. Once hot, add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced red bell pepper, julienned carrot, sliced zucchini, and broccoli florets to the skillet. Stir-fry for 5-7 minutes until vegetables are tender but still crisp.
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, and a splash of water to thin the sauce if needed.
- Add the cooked spaghetti to the skillet with the vegetables. Pour the peanut sauce over the top and toss everything together until well combined and heated through.
- Season with salt and crushed red pepper flakes to taste. Remove from heat and stir in chopped green onions and cilantro.
- Serve immediately, garnished with additional cilantro if desired.
