Ingredients

  • Spaghetti - 160 grams
  • Red bell pepper - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 medium, sliced
  • Broccoli florets - 100 grams
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Peanut butter - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Crushed red pepper flakes - to taste

Steps

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add sesame oil. Once hot, add minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced red bell pepper, julienned carrot, sliced zucchini, and broccoli florets to the skillet. Stir-fry for 5-7 minutes until vegetables are tender but still crisp.
  4. In a small bowl, whisk together peanut butter, soy sauce, lime juice, and a splash of water to thin the sauce if needed.
  5. Add the cooked spaghetti to the skillet with the vegetables. Pour the peanut sauce over the top and toss everything together until well combined and heated through.
  6. Season with salt and crushed red pepper flakes to taste. Remove from heat and stir in chopped green onions and cilantro.
  7. Serve immediately, garnished with additional cilantro if desired.
