Ingredients
- Lasagna noodles - 6 sheets
- Coconut milk - 200 ml
- Firm tofu - 150 g, crumbled
- Spinach - 100 g, fresh
- Zucchini - 1 medium, thinly sliced
- Carrot - 1 medium, grated
- Red bell pepper - 1, thinly sliced
- Thai red curry paste - 2 tablespoons
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Fresh basil - 10 leaves, chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the grated carrot, sliced zucchini, and red bell pepper to the skillet. Cook for about 5-7 minutes until slightly tender.
- Stir in the fresh spinach and cook until wilted. Remove from heat and season with salt and pepper.
- In a bowl, combine the crumbled tofu, coconut milk, Thai red curry paste, soy sauce, lime juice, and chopped basil. Mix well until creamy.
- Spread a thin layer of the tofu-coconut mixture at the bottom of a baking dish.
- Layer 2 sheets of lasagna noodles over the sauce, followed by half of the sautéed vegetables and then another layer of the tofu mixture.
- Repeat the layers with another 2 sheets of noodles, remaining vegetables, and the rest of the tofu mixture.
- Top with the last 2 sheets of noodles and cover with any remaining tofu mixture.
- Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until golden brown.
- Let the lasagna cool for a few minutes before slicing and serving.
