Ingredients

  • Lasagna noodles - 6 sheets
  • Coconut milk - 200 ml
  • Firm tofu - 150 g, crumbled
  • Spinach - 100 g, fresh
  • Zucchini - 1 medium, thinly sliced
  • Carrot - 1 medium, grated
  • Red bell pepper - 1, thinly sliced
  • Thai red curry paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh basil - 10 leaves, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and add minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add the grated carrot, sliced zucchini, and red bell pepper to the skillet. Cook for about 5-7 minutes until slightly tender.
  4. Stir in the fresh spinach and cook until wilted. Remove from heat and season with salt and pepper.
  5. In a bowl, combine the crumbled tofu, coconut milk, Thai red curry paste, soy sauce, lime juice, and chopped basil. Mix well until creamy.
  6. Spread a thin layer of the tofu-coconut mixture at the bottom of a baking dish.
  7. Layer 2 sheets of lasagna noodles over the sauce, followed by half of the sautéed vegetables and then another layer of the tofu mixture.
  8. Repeat the layers with another 2 sheets of noodles, remaining vegetables, and the rest of the tofu mixture.
  9. Top with the last 2 sheets of noodles and cover with any remaining tofu mixture.
  10. Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until golden brown.
  11. Let the lasagna cool for a few minutes before slicing and serving.
