Ingredients

  • Firm tofu - 200 grams
  • Bread crumbs - 50 grams
  • Red curry paste - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons (for frying)
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Peanut butter - 1 tablespoon
  • Water - 1 tablespoon
  • Honey or agave syrup - 1 teaspoon
  • Sriracha - optional, for serving

Steps

  1. Drain the tofu and press it between paper towels to remove excess moisture for about 15 minutes.
  2. In a bowl, crumble the pressed tofu with your hands.
  3. Add the bread crumbs, red curry paste, minced garlic, cilantro, lime juice, soy sauce, and cornstarch to the crumbled tofu. Mix until well combined.
  4. Shape the mixture into two patties.
  5. Heat vegetable oil in a non-stick frying pan over medium heat. Once hot, add the patties and cook for about 5-7 minutes on each side, until golden brown.
  6. While the patties are cooking, prepare the peanut sauce by mixing peanut butter, water, honey (or agave syrup), and a pinch of salt in a small bowl until smooth.
  7. To assemble the burgers, place a lettuce leaf on each bun, add the cooked tofu patty, and top with sliced tomato and cucumber.
  8. Drizzle the peanut sauce over the top and add sriracha if desired. Close the burger with the top bun and serve immediately.
