Ingredients

  • Thai tea leaves - 2 tablespoons
  • Coconut milk - 200 ml
  • Almond milk - 100 ml
  • Agave syrup - 2 tablespoons
  • Cornstarch - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a small saucepan, combine the Thai tea leaves and coconut milk. Heat over low-medium heat until it just starts to simmer. Remove from heat and let steep for 10 minutes.
  2. Strain the tea leaves from the coconut milk using a fine mesh strainer, pressing down to extract all the flavors.
  3. In a separate bowl, whisk together the almond milk, agave syrup, cornstarch, vanilla extract, and salt until smooth.
  4. Gradually pour the strained coconut milk into the almond milk mixture while whisking continuously to avoid lumps.
  5. Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens, about 5-7 minutes.
  6. Once thickened, remove from heat and pour the pudding into two serving bowls or ramekins.
  7. Let the pudding cool to room temperature, then refrigerate for at least 2 hours or until set.
  8. Serve chilled, optionally garnished with a sprinkle of toasted coconut or a few Thai basil leaves.
