Steps
- In a small saucepan, combine the Thai tea leaves and coconut milk. Heat over low-medium heat until it just starts to simmer. Remove from heat and let steep for 10 minutes.
- Strain the tea leaves from the coconut milk using a fine mesh strainer, pressing down to extract all the flavors.
- In a separate bowl, whisk together the almond milk, agave syrup, cornstarch, vanilla extract, and salt until smooth.
- Gradually pour the strained coconut milk into the almond milk mixture while whisking continuously to avoid lumps.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens, about 5-7 minutes.
- Once thickened, remove from heat and pour the pudding into two serving bowls or ramekins.
- Let the pudding cool to room temperature, then refrigerate for at least 2 hours or until set.
- Serve chilled, optionally garnished with a sprinkle of toasted coconut or a few Thai basil leaves.
