Ingredients
- Sweet potatoes - 300 grams
- Quinoa - 100 grams, uncooked
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh cilantro - 30 grams, chopped
- Thai red curry paste - 1 tablespoon
- Lime juice - 1 tablespoon
- Soy sauce - 1 tablespoon
- Chickpea flour - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Burger buns - 2 pieces
- Lettuce leaves - 2
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cut the sweet potatoes into cubes, then toss with a tablespoon of olive oil, salt, and pepper. Roast in the oven for 20-25 minutes until tender.
- While the sweet potatoes are roasting, cook the quinoa according to package instructions and set aside to cool.
- In a skillet over medium heat, add a tablespoon of olive oil and sauté the chopped red onion and minced garlic until they are translucent.
- In a large bowl, combine the roasted sweet potatoes, cooked quinoa, sautéed onion and garlic, chopped cilantro, Thai red curry paste, lime juice, soy sauce, chickpea flour, salt, and pepper. Mash the mixture until well combined.
- Form the mixture into two burger patties.
- In the same skillet, heat a little more olive oil over medium heat and cook the patties for 4-5 minutes on each side until golden brown.
- Serve the patties on burger buns topped with lettuce and your choice of additional toppings, such as sliced cucumbers or avocado.
