Ingredients

  • Ground chicken - 250 grams
  • Red curry paste - 2 tablespoons

  • Fish sauce - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Burger buns (dairy-free) - 2
  • Cucumber - 1, thinly sliced
  • Carrot - 1, julienned
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Sriracha sauce - for serving
  • Mint leaves - for garnish

Steps

  1. In a bowl, combine ground chicken, red curry paste, minced garlic, chopped cilantro, lime juice, fish sauce, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into 2 equal patties.
  3. Heat a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until fully cooked and golden brown.
  4. While the patties are cooking, prepare the cucumber salad by mixing sliced cucumber, julienned carrot, rice vinegar, sugar, and sesame oil in a separate bowl. Toss well and set aside.
  5. Toast the burger buns lightly in the same skillet for about 1-2 minutes until golden.
  6. Assemble the burgers by placing the cooked patties on the bottom half of each bun, adding a generous portion of the cucumber salad on top, and drizzling with sriracha sauce.
  7. Garnish with mint leaves, place the top half of the bun, and serve immediately.
