- Red curry paste - 2 tablespoons

- Black pepper - 1/2 teaspoon
- Burger buns (dairy-free) - 2
- Cucumber - 1, thinly sliced
- Carrot - 1, julienned
- Rice vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Sesame oil - 1 teaspoon
- Sriracha sauce - for serving
- Mint leaves - for garnish
Steps
- In a bowl, combine ground chicken, red curry paste, minced garlic, chopped cilantro, lime juice, fish sauce, salt, and black pepper. Mix until well combined.
- Shape the mixture into 2 equal patties.
- Heat a non-stick skillet over medium heat and cook the patties for about 5-6 minutes on each side, or until fully cooked and golden brown.
- While the patties are cooking, prepare the cucumber salad by mixing sliced cucumber, julienned carrot, rice vinegar, sugar, and sesame oil in a separate bowl. Toss well and set aside.
- Toast the burger buns lightly in the same skillet for about 1-2 minutes until golden.
- Assemble the burgers by placing the cooked patties on the bottom half of each bun, adding a generous portion of the cucumber salad on top, and drizzling with sriracha sauce.
- Garnish with mint leaves, place the top half of the bun, and serve immediately.
