- Fresh cilantro - 20 grams, chopped
- Green onion - 2, sliced

- Sesame oil - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Salt - to taste

- Roasted peanuts - 30 grams, crushed (for garnish)
Steps
- Press the tofu for about 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
- In a non-stick skillet, heat sesame oil over medium heat, then add the tofu cubes and cook until golden brown on all sides, about 10-12 minutes.
- While the tofu is cooking, prepare the dressing by whisking together lime juice, soy sauce, Sriracha, rice vinegar, salt, and pepper in a small bowl.
- In a large mixing bowl, combine sliced cucumber, red bell pepper, julienned carrot, chopped cilantro, and sliced green onion.
- Once the tofu is cooked, allow it to cool slightly, then add it to the salad mix.
- Pour the dressing over the salad and gently toss to combine all ingredients evenly.
- Serve the salad in bowls, garnished with crushed roasted peanuts on top.
