Ingredients

  • Firm tofu - 200 grams
  • Cucumber - 1 medium, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1 medium, julienned
  • Fresh cilantro - 20 grams, chopped
  • Green onion - 2, sliced
  • Lime juice - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sriracha - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Roasted peanuts - 30 grams, crushed (for garnish)

Steps

  1. Press the tofu for about 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. In a non-stick skillet, heat sesame oil over medium heat, then add the tofu cubes and cook until golden brown on all sides, about 10-12 minutes.
  3. While the tofu is cooking, prepare the dressing by whisking together lime juice, soy sauce, Sriracha, rice vinegar, salt, and pepper in a small bowl.
  4. In a large mixing bowl, combine sliced cucumber, red bell pepper, julienned carrot, chopped cilantro, and sliced green onion.
  5. Once the tofu is cooked, allow it to cool slightly, then add it to the salad mix.
  6. Pour the dressing over the salad and gently toss to combine all ingredients evenly.
