Ingredients

  • Squid - 300 grams, cleaned and cut into rings
  • Coconut oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Red chili - 2, finely sliced
  • Fish sauce - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Coriander - 1 tablespoon, chopped (plus extra for garnish)
  • Thai basil - 1 tablespoon, chopped (plus extra for garnish)
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Zucchini - 1 medium, sliced into thin rounds (for serving)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the squid rings, coconut oil, minced garlic, sliced red chili, fish sauce, lime juice, chopped coriander, Thai basil, black pepper, and salt. Mix well until the squid is evenly coated.
  3. Transfer the coated squid to a baking dish and spread it out in a single layer.
  4. Bake in the preheated oven for 15-20 minutes, or until the squid is cooked through and tender.
  5. While the squid is baking, prepare the zucchini by lightly sautéing it in a pan over medium heat for about 5 minutes, until tender.
  6. Once the squid is done, remove it from the oven and let it rest for a couple of minutes before serving.
  7. Serve the baked squid over the sautéed zucchini, garnished with extra chopped coriander and Thai basil.
