  • Vegetable broth - 500 milliliters
  • Coconut milk - 200 milliliters
  • Fresh ginger - 1 tablespoon, grated
  • Garlic - 2 cloves, minced
  • Red curry paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Spinach - 100 grams
  • Fresh cilantro - 2 tablespoons, chopped
  • Thai basil - 2 tablespoons, chopped
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Green onions - 2 stalks, sliced
  • Tofu - 150 grams, cubed
  • Peanut butter - 1 tablespoon

Steps

  1. Bring a pot of water to a boil and cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large saucepan, heat a little oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  3. Stir in the red curry paste and cook for another minute, mixing well with the garlic and ginger.
  4. Pour in the vegetable broth and coconut milk, stirring to combine. Bring to a gentle simmer.
  5. Add the soy sauce, lime juice, and chili flakes, then let the soup simmer for about 5 minutes.
  6. Incorporate the cherry tomatoes and tofu cubes into the soup, and cook for another 5 minutes until heated through.
  7. Add the spinach, cilantro, and Thai basil to the soup, stirring until the spinach wilts.
  8. Divide the cooked rice noodles into two bowls and ladle the hot soup over them.
  9. Top with sliced green onions and a dollop of peanut butter if desired. Serve immediately.
