- Lime juice - 1 tablespoon
- Cherry tomatoes - 100 grams, halved
- Spinach - 100 grams
- Fresh cilantro - 2 tablespoons, chopped
- Thai basil - 2 tablespoons, chopped
- Chili flakes - 1 teaspoon (adjust to taste)
- Green onions - 2 stalks, sliced
- Tofu - 150 grams, cubed
- Peanut butter - 1 tablespoon
Steps
- Bring a pot of water to a boil and cook the rice noodles according to package instructions. Drain and set aside.
- In a large saucepan, heat a little oil over medium heat. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
- Stir in the red curry paste and cook for another minute, mixing well with the garlic and ginger.

- Add the soy sauce, lime juice, and chili flakes, then let the soup simmer for about 5 minutes.
- Incorporate the cherry tomatoes and tofu cubes into the soup, and cook for another 5 minutes until heated through.
- Add the spinach, cilantro, and Thai basil to the soup, stirring until the spinach wilts.
- Divide the cooked rice noodles into two bowls and ladle the hot soup over them.
