  • Fresh cilantro - 30 grams, chopped
  • Green onion - 2, finely sliced
  • Lime juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Rice flour - 50 grams (or breadcrumbs)
  • Coconut oil - 2 tablespoons (for frying)
  • Burger buns - 2, dairy-free
  • Sliced cucumber - 50 grams
  • Sliced tomato - 50 grams
  • Lettuce leaves - 2

Steps

  1. In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
  2. Add the red curry paste, minced garlic, chopped cilantro, sliced green onion, lime juice, ground cumin, and salt to the mashed chickpeas. Mix until well combined.
  3. Gradually add the rice flour to the mixture until the consistency allows you to form patties that hold together.
  4. Divide the mixture into two equal portions and shape each portion into a burger patty.
  5. Heat the coconut oil in a non-stick skillet over medium heat. Once hot, carefully place the patties in the skillet.
  6. Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
  7. While the patties are cooking, prepare the burger buns by lightly toasting them if desired.
  8. Assemble the burgers by placing a patty on each bun, topped with sliced cucumber, tomato, and lettuce.
