- Rice flour - 50 grams (or breadcrumbs)
- Coconut oil - 2 tablespoons (for frying)
- Burger buns - 2, dairy-free
- Sliced cucumber - 50 grams
- Sliced tomato - 50 grams
- Lettuce leaves - 2
Steps
- In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some texture.
- Add the red curry paste, minced garlic, chopped cilantro, sliced green onion, lime juice, ground cumin, and salt to the mashed chickpeas. Mix until well combined.
- Gradually add the rice flour to the mixture until the consistency allows you to form patties that hold together.
- Divide the mixture into two equal portions and shape each portion into a burger patty.
- Heat the coconut oil in a non-stick skillet over medium heat. Once hot, carefully place the patties in the skillet.
- Cook the patties for about 5-7 minutes on each side, or until they are golden brown and heated through.
- While the patties are cooking, prepare the burger buns by lightly toasting them if desired.
- Assemble the burgers by placing a patty on each bun, topped with sliced cucumber, tomato, and lettuce.
