Ingredients

  • Pizza dough - 200 grams
  • Coconut oil - 1 tablespoon
  • White fish fillets (e.g., tilapia or cod) - 200 grams
  • Red curry paste - 2 tablespoons
  • Coconut milk - 100 ml
  • Mozzarella cheese, shredded - 100 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime - 1, juiced
  • Red onion, thinly sliced - 50 grams
  • Red bell pepper, thinly sliced - 50 grams
  • Thai basil leaves - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  3. Heat coconut oil in a pan over medium heat, then add the white fish fillets. Cook for about 3-4 minutes on each side until cooked through, then remove from heat.
  4. In the same pan, add red curry paste and coconut milk, stirring until well combined. Season with salt and pepper to taste.
  5. Flake the cooked fish into the curry sauce, stirring to coat the fish evenly.
  6. Spread the fish mixture evenly over the rolled-out pizza dough.
  7. Sprinkle shredded mozzarella cheese on top of the fish mixture.
  8. Add sliced red onion and red bell pepper over the cheese.
  9. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  10. Remove the pizza from the oven and garnish with fresh cilantro, Thai basil, and a squeeze of lime juice before serving.
