  • Ground pork - 300 grams
  • Coconut flour - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Shallots - 1 small, finely chopped
  • Red chili flakes - 1/2 teaspoon
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Fresh basil - 2 tablespoons, chopped
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 2 tablespoons (for frying)

Steps

  1. In a large mixing bowl, combine the ground pork, coconut flour, minced garlic, chopped shallots, red chili flakes, fish sauce, lime juice, chopped cilantro, chopped basil, egg, salt, and black pepper.
  2. Mix the ingredients thoroughly until well combined. You can use your hands for better incorporation.
  3. Divide the mixture into 4 equal portions and shape each portion into a patty, about 1.5 cm thick.
  4. Heat the coconut oil in a large skillet over medium heat.
  5. Add the patties to the skillet and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  6. Once cooked, remove the patties from the skillet and let them rest on a plate lined with paper towels to absorb excess oil.
  7. Serve warm, garnished with additional fresh herbs or lime wedges if desired.
