  • Red bell pepper - 1 medium, julienned
  • Avocado - 1 ripe, sliced
  • Fresh cilantro - 20g, chopped
  • Fresh mint - 20g, chopped
  • Lettuce leaves - 4 large
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Sesame oil - 1 teaspoon

Steps

  1. Cook the rice vermicelli noodles according to package instructions, then drain and set aside.
  2. Prepare all vegetables by washing, peeling, and cutting them into thin julienne strips.
  3. In a bowl, mix together the soy sauce, lime juice, and sesame oil for the dipping sauce.
  4. Fill a shallow dish with warm water and soak one rice paper wrapper for about 10-15 seconds until soft and pliable.
  5. Lay the softened rice paper on a clean surface and place a lettuce leaf in the center.
  6. Add a small amount of rice vermicelli noodles, followed by the julienned carrot, cucumber, red bell pepper, avocado, cilantro, and mint.
  7. Fold the sides of the rice paper over the filling, then roll it up from the bottom to the top, ensuring it is tightly wrapped.
  8. Repeat the process with the remaining rice paper wrappers and filling ingredients.
  9. Serve the rice paper rolls with the dipping sauce on the side.
