Steps
- Cook the rice vermicelli noodles according to package instructions, then drain and set aside.
- Prepare all vegetables by washing, peeling, and cutting them into thin julienne strips.
- In a bowl, mix together the soy sauce, lime juice, and sesame oil for the dipping sauce.
- Fill a shallow dish with warm water and soak one rice paper wrapper for about 10-15 seconds until soft and pliable.
- Lay the softened rice paper on a clean surface and place a lettuce leaf in the center.
- Add a small amount of rice vermicelli noodles, followed by the julienned carrot, cucumber, red bell pepper, avocado, cilantro, and mint.
- Fold the sides of the rice paper over the filling, then roll it up from the bottom to the top, ensuring it is tightly wrapped.
