- Chickpeas (canned, drained) - 200g
- Red curry paste - 2 tbsp
- Coconut milk - 50ml
- Bread crumbs - 50g
- Fresh cilantro (chopped) - 2 tbsp
- Lime juice - 1 tbsp
- Garlic (minced) - 1 clove
- Green onion (chopped) - 2 stalks
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Burger buns (vegan) - 2
- Lettuce leaves - 2
- Tomato (sliced) - 1 medium
- Cucumber (sliced) - 1/2 medium
- Sriracha sauce - for serving
Steps
- In a mixing bowl, mash the chickpeas with a fork until slightly chunky.
- Add the cooked quinoa, red curry paste, coconut milk, bread crumbs, chopped cilantro, lime juice, minced garlic, green onion, salt, and black pepper to the bowl.
- Mix everything until well combined, then form the mixture into two equal-sized patties.
- Heat a non-stick skillet over medium heat and lightly grease it with oil.
- Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare your burger buns by toasting them lightly if desired.
- Assemble the burgers by placing a lettuce leaf on each bun, followed by the cooked patty, slices of tomato, and cucumber.
- Drizzle with Sriracha sauce to taste and top with the other half of the bun.
