Ingredients

  • Cooked quinoa - 100g
  • Chickpeas (canned, drained) - 200g
  • Red curry paste - 2 tbsp
  • Coconut milk - 50ml
  • Bread crumbs - 50g
  • Fresh cilantro (chopped) - 2 tbsp
  • Lime juice - 1 tbsp
  • Garlic (minced) - 1 clove
  • Green onion (chopped) - 2 stalks
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Burger buns (vegan) - 2
  • Lettuce leaves - 2
  • Tomato (sliced) - 1 medium
  • Cucumber (sliced) - 1/2 medium
  • Sriracha sauce - for serving

Steps

  1. In a mixing bowl, mash the chickpeas with a fork until slightly chunky.
  2. Add the cooked quinoa, red curry paste, coconut milk, bread crumbs, chopped cilantro, lime juice, minced garlic, green onion, salt, and black pepper to the bowl.
  3. Mix everything until well combined, then form the mixture into two equal-sized patties.
  4. Heat a non-stick skillet over medium heat and lightly grease it with oil.
  5. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, prepare your burger buns by toasting them lightly if desired.
  7. Assemble the burgers by placing a lettuce leaf on each bun, followed by the cooked patty, slices of tomato, and cucumber.
  8. Drizzle with Sriracha sauce to taste and top with the other half of the bun.
