  • Soy sauce (low sodium) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey or low-carb sweetener - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Chopped peanuts - 2 tablespoons (for garnish)
  • Fresh cilantro - a handful (for garnish)
  • Lime - 1, cut into wedges

Steps

  1. Using a spiralizer or a vegetable peeler, create zucchini noodles from the two medium zucchinis. Set aside.
  2. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey (or sweetener), sesame oil, minced garlic, grated ginger, and red pepper flakes until smooth and well combined.
  3. In a large skillet over medium heat, add the zucchini noodles and cook for about 3-4 minutes, stirring frequently until just tender but still crunchy.
  4. Remove the skillet from heat and pour the peanut sauce over the zucchini noodles. Toss well to coat the noodles evenly with the sauce.
  5. Serve immediately, garnished with chopped peanuts, fresh cilantro, and lime wedges on the side.
