Ingredients

  • Zucchini - 2 medium

  • Green onion - 2 stalks, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Peanuts - 1/4 cup, crushed (for garnish)
  • Peanut butter - 3 tablespoons (natural)
  • Soy sauce - 2 tablespoons (low sodium)
  • Lime juice - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Honey or sugar substitute - 1 teaspoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated

Steps

  1. Using a spiralizer, turn the zucchini into zoodles (spiralized noodles) and set aside.
  2. In a large mixing bowl, combine the julienned carrot, sliced red bell pepper, sliced cucumber, chopped green onion, and chopped cilantro.
  3. In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, sesame oil, honey or sugar substitute, minced garlic, and grated ginger until smooth and well combined.
