- Peanut butter - 3 tablespoons (45g)
- Soy sauce - 1 tablespoon (15ml)
- Lime juice - 1 tablespoon (15ml)
- Maple syrup - 1 teaspoon (5ml)
- Sesame oil - 1 teaspoon (5ml)
- Garlic - 1 clove, minced
- Crushed red pepper flakes - 1/4 teaspoon (optional)
- Roasted peanuts - 30g, for garnish
Steps
- In a large bowl, combine the shredded cabbage, julienned carrot, sliced red bell pepper, diced cucumber, chopped green onions, and chopped cilantro.
- In a separate small bowl, whisk together the peanut butter, soy sauce, lime juice, maple syrup, sesame oil, minced garlic, and crushed red pepper flakes until smooth.
- Pour the peanut dressing over the salad mixture and toss well to coat all the vegetables evenly.
