Ingredients

  • Cabbage (green) - 100g, shredded
  • Carrot - 1 medium (about 70g), julienned
  • Red bell pepper - 1 medium (about 120g), sliced
  • Cucumber - 1 small (about 150g), diced
  • Green onions - 2, chopped
  • Fresh cilantro - 15g, chopped
  • Peanut butter - 3 tablespoons (45g)
  • Soy sauce - 1 tablespoon (15ml)
  • Lime juice - 1 tablespoon (15ml)
  • Maple syrup - 1 teaspoon (5ml)
  • Sesame oil - 1 teaspoon (5ml)
  • Garlic - 1 clove, minced
  • Crushed red pepper flakes - 1/4 teaspoon (optional)
  • Roasted peanuts - 30g, for garnish

Steps

  1. In a large bowl, combine the shredded cabbage, julienned carrot, sliced red bell pepper, diced cucumber, chopped green onions, and chopped cilantro.
  2. In a separate small bowl, whisk together the peanut butter, soy sauce, lime juice, maple syrup, sesame oil, minced garlic, and crushed red pepper flakes until smooth.
  3. Pour the peanut dressing over the salad mixture and toss well to coat all the vegetables evenly.
  4. Let the salad sit for about 5 minutes to allow the flavors to meld.
  5. Serve the salad in bowls and sprinkle with roasted peanuts on top for added crunch.
