Ingredients

  • Peanut butter - 3 tablespoons
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Chili paste - 1 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Green onions - 2, sliced
  • Salt - ½ teaspoon
  • Black pepper - ½ teaspoon
  • Burger buns - 2
  • Lettuce leaves - 2
  • Cucumber - ½, sliced
  • Carrot - 1, grated

Steps

  1. In a mixing bowl, combine ground chicken, peanut butter, soy sauce, lime juice, minced garlic, grated ginger, chili paste, chopped cilantro, salt, and black pepper. Mix until well combined.
  2. Divide the mixture into two equal portions and shape them into burger patties.
  3. Preheat a grill or skillet over medium heat and lightly grease it.
  4. Cook the patties for about 5-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C (165°F).
  5. While the patties are cooking, prepare the toppings: slice the cucumber, grate the carrot, and wash the lettuce leaves.
  6. Once the patties are cooked, toast the burger buns on the grill or in a toaster if desired.
  7. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the chicken patty, sliced cucumber, grated carrot, and additional cilantro if desired. Top with the other half of the bun.
