Steps

  1. Prepare the lotus root by slicing it thinly and soaking it in cold water for 10 minutes to reduce bitterness.
  2. In a pot, bring water to a boil, then add the lotus root slices and blanch for 3-5 minutes until just tender. Drain and rinse under cold water to stop the cooking process.
  3. In a large mixing bowl, combine the blanched lotus root, julienned carrot, cucumber, and red bell pepper.
  4. In a small bowl, whisk together lime juice, soy sauce, maple syrup, and chili flakes to create the dressing.
