- Pizza dough - 250 grams
- Coconut milk - 100 ml
- Lemongrass - 1 stalk, finely chopped
- Garlic - 2 cloves, minced
- Fresh basil - 15 grams, chopped
- Red bell pepper - 1, thinly sliced
- Carrot - 1, julienned
- Zucchini - 1 small, thinly sliced
- Chili flakes - 1 teaspoon
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking tray or pizza stone.
- In a small saucepan, combine the coconut milk, finely chopped lemongrass, minced garlic, soy sauce, lime juice, chili flakes, salt, and black pepper. Heat over medium heat until it simmers, then remove from heat.
- Spread the lemongrass sauce evenly over the rolled-out pizza dough.
- Top the pizza with sliced red bell pepper, julienned carrot, and sliced zucchini. Sprinkle fresh basil on top.
- Bake the pizza in the preheated oven for 15-20 minutes or until the crust is golden brown.
