Ingredients

  • Ground turkey - 300 grams
  • Fresh cilantro - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Green onions - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Thai red curry paste - 1 tablespoon
  • Fish sauce - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Romaine lettuce - 2 leaves
  • Mango - 1 small, diced
  • Red bell pepper - 1/2, diced
  • Cilantro - 15 grams, additional for salsa
  • Lime juice - 1 tablespoon, additional for salsa

Steps

  1. In a mixing bowl, combine ground turkey, chopped cilantro, mint, green onions, minced garlic, red curry paste, fish sauce, lime juice, salt, and black pepper. Mix until well combined.
  2. Form the mixture into 2 equal patties, approximately 1.5 cm thick.
  3. Heat a non-stick skillet over medium heat and lightly grease it with cooking oil. Cook the patties for about 5-6 minutes on each side or until they reach an internal temperature of 75°C.
  4. While the turkey burgers are cooking, prepare the mango salsa by combining diced mango, red bell pepper, additional chopped cilantro, and lime juice in a small bowl. Mix well and set aside.
  5. Once the patties are cooked, toast the whole wheat burger buns in the skillet for 1-2 minutes until golden brown.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by the turkey patty and a generous scoop of mango salsa. Top with the other half of the bun and serve immediately.
