- Chickpeas - 400 grams (canned, drained)
- Brown rice - 100 grams (cooked)
- Fresh cilantro - 30 grams (chopped)
- Fresh mint - 15 grams (chopped)
- Fresh basil - 15 grams (chopped)
- Garlic - 2 cloves (minced)
- Red chili - 1 small (finely chopped)
- Soy sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Cornstarch - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Burger buns - 2 (whole wheat recommended)
- Lettuce leaves - 2
- Tomato - 1 medium (sliced)
- Cucumber - 1/2 (sliced)
- Mayonnaise - 2 tablespoons
- Lime zest - 1 teaspoon
Steps
- In a large mixing bowl, mash the drained chickpeas with a fork until mostly smooth, leaving some chunks for texture.
- Add cooked brown rice, chopped cilantro, mint, basil, minced garlic, chopped red chili, soy sauce, lime juice, cornstarch, salt, and black pepper to the bowl. Mix until well combined.
- Shape the mixture into two equal-sized patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, prepare the lime mayo by mixing mayonnaise with lime zest in a small bowl.
- To assemble the burgers, place a lettuce leaf on each burger bun, add a hot patty, top with tomato and cucumber slices, and spread lime mayo on the top bun.
