Ingredients

  • Chickpeas - 400 grams (canned, drained)
  • Brown rice - 100 grams (cooked)
  • Fresh cilantro - 30 grams (chopped)
  • Fresh mint - 15 grams (chopped)
  • Fresh basil - 15 grams (chopped)
  • Garlic - 2 cloves (minced)
  • Red chili - 1 small (finely chopped)
  • Soy sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Burger buns - 2 (whole wheat recommended)
  • Lettuce leaves - 2
  • Tomato - 1 medium (sliced)
  • Cucumber - 1/2 (sliced)
  • Mayonnaise - 2 tablespoons
  • Lime zest - 1 teaspoon

Steps

  1. In a large mixing bowl, mash the drained chickpeas with a fork until mostly smooth, leaving some chunks for texture.
  2. Add cooked brown rice, chopped cilantro, mint, basil, minced garlic, chopped red chili, soy sauce, lime juice, cornstarch, salt, and black pepper to the bowl. Mix until well combined.
  3. Shape the mixture into two equal-sized patties.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and crispy.
  5. While the patties are cooking, prepare the lime mayo by mixing mayonnaise with lime zest in a small bowl.
  6. To assemble the burgers, place a lettuce leaf on each burger bun, add a hot patty, top with tomato and cucumber slices, and spread lime mayo on the top bun.
