Ingredients

  • Whole fish (e.g., tilapia or snapper) - 400 grams
  • Garlic - 3 cloves, minced
  • Fresh cilantro - 30 grams, chopped
  • Lime - 1, juiced
  • Fish sauce - 2 tablespoons
  • Chili flakes - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime wedges - for serving

Steps

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, combine minced garlic, chopped cilantro, lime juice, fish sauce, chili flakes, olive oil, salt, and black pepper to create a marinade.
  3. Clean and gut the fish if necessary, then score the sides of the fish with a sharp knife to allow the marinade to penetrate.
  4. Rub the marinade generously all over the fish, including inside the cavity. Let it marinate for at least 15 minutes.
  5. Place the marinated fish on the preheated grill. Grill for about 8-10 minutes on each side, or until the fish is cooked through and has nice grill marks.
  6. Remove the fish from the grill and let it rest for a few minutes before serving.
  7. Serve the grilled fish with lime wedges on the side.
